Pig Roast

4th of July was great! We roasted a pig that took several hours to cook. I’ve never done anything like this before. It got done about 2:00 a.m. We carrie it into the kitchen where we put on in the counter. I was really surprised that Ms. Carmen let us do that. Mr. Larry and Mr. Dustin cut it into pieces and in the oven it went to keep warm.
We went to bed after a long night of roasting our 135 pound pig. We slept in and had the best meal. There was homemade potato salad, baked beans, deviled eggs, BBQ or plain roast pork and great dessert. We ate a lot of food that day, and I know I had about three plates full of food. I was hurting after that, but it was totally worth it.
